Guo Ya Yin Teochew Kway Chap
The elderly owner of this stall has been selling Teochew kway chap stall every since he was a young man. Although not, by far, the best kway chap we've had in Singapore, he serves up comforting bowls, reminiscent of those from an earlier time. The kway (flat rice sheets) is simmered in a thin rice flour broth to keep the sheets silky smooth. The dark soy broth is flavourful without being too herbal or salty.
