Reason the trotters are not the usual fatty type is because (i think) they use the forelegs..or in Hokkien they call it the Terr Chiew (pig arm), not Terr Kah (pig leg)...which is supposedly leaner.
I tell you...knn one serving of this black sauce terrkah with a bowl of piping hot white fluffy rice, no need the bak kut teh soup lah, can make you feel like a whole new human being thankful for being alive for another day, because got chance to eat this dish. The black sauce gravy is not your usual lor-terrkah chup (braised pig leg gravy) but it is concocted with high quality sweet black sauce and the collagen, wah lao eh, is so evident and it leaves behind this....this...ok all you cum lovers might probably attest to it - leaves behind this sticky sensation in your mouth hahaha.
It is really sibeh shiok
