in HFJ each singer need to get their customers to patronise the joint. In oredr to do so ehe singer is given a quota, eg every week they have to book certain amount of tables (定台) for customers (noumber various from joints to joints). There is a min expensives to be hit (最低消费). It will not be counted as one if the expenses is lower than the amount set by the joint. Eg, Joint A requires each singers to book 2 tables with min expenses of $300 per table. If they are not able to book table then either this $300 will be deducted from their income or they have to hang $300 flower for themselves to make up. In additional to the week quota, some joints also require the singers to 定台 on special occasions such as PH eves, special show performance.

定台 doesn't mean open bottle. The min expenses could be still be met with beers and flower money.
