Consider that you will have to make it back to HK airport 90 mins before the flight, you have only 7 and half hours. Say your flight arrives on time. Clearing HK immigration may take while. Sometimes q can be long (30 mins), unless you have APEC card or HK Frequent Traveler Card that will minimise the time. If you have to collect luggage you have to factor thatin too. To go to Macau there are 2 options. One is take a Ferry direct from HK airport to Macau which operates on fixed schedule but not so regular while the other is to take a trian to Kowloon where they operate the Macau HK Ferry. From airport to Kowloon will take you at least another 30mins at best if everything is smooth.

Say Best case is reach Kowloon Ferry within 1.5 hours after landing, you may have to catch next Ferry to Macau and may have to wait 30 mins to 1 hr (depends on what time you reach Kowloon Ferry). Ferry to Macau will be around 1 hour or less. Hit the suana, wait for show to start to pick gals, anything less than 90 mins is a hit and run case. Then time to be ontime for next Ferry back to HK and than get on the trian to HK Airport (1.5 hours to2 hours)

I guess it really depends on any cock up along the way.

If I were you, check on internet the Ferrry schedule from HK airport to Macau and see if that works for your stopover. If luck is on your side and can book the both going and return ticket, you are quite safe.

If not, take it a step at a time. See what time you reach Kowloon Ferry and than check the Ferry schedule. If the schedule can bring you back and enough time to check in for your flight, then you are safe. Tips: you can check in for your next flight at the Airport train station at Kowloon which will save you some time.
