Its been a few years since I've been during xmas but if you dont mind , there is defininately something available if you're not choosy. Many placves still dont have internet booking. Try the Leng Kee bars and their guest rooms above or in fact any of the Soi Baukow bars with their upstairs rooms. Not the Hilton but at least a place to sleep.
If you are there during xmas day , there are a few places (I remember TQ1 and TQ2 but TQ2 recently sold) where they will order millions of small styrofoam balls to fill their bar. Up to our thigh height. Not exactly snow but builds up the party atmosphere.
